Earlier this week I wrote about how I get most of my fuel at breakfast and lunch. This chocolate-avocado pudding is a great example of that: It’s a serious calorie load at 545 calories, but it also delivers 40 grams of protein and 20 grams of fiber. Not bad for a creamy chocolate dessert, eh?
I could probably lighten this up a bit by using less avocado. This was essentially a half batch of a recipe from David Perlmutter’s Grain Brain Cookbook, and there’s an entire avocado in that cup — contributing 322 calories and 29 grams of (mostly healthy) fats to the total.
Gotta say, though, this was both tasty and filling. It will be fun to experiment with this further.
High-protein chocolate-avocado pudding:
¼ cup unsweetened almond milk
1/6 cup cocoa powder
1 scoop vanilla Body Fortess whey protein
2 T. PB2 powdered peanut butter
½ t. vanilla
You’re supposed to dump everything in a food processor or blender, but I just used a hand mixer, which worked fine.
