This is a very simple but tasty and hearty soup.
More importantly (at least to me) it’s the first homemade soup that all of my kids have liked. (Well, Rowan is off at college and hasn’t tried it yet, but if her three younger sibs like this, I can’t imagine that she won’t.)
Here’s the recipe:
(adapted from something I saw on the back of package of shredded cheese)
1 cup water
1 cup each, sliced carrots and celery
3 cups diced, peeled potatoes
3 cups frozen corn
2 cups milk
1 cup shredded cheddar cheese
1 tsp. salt
1/2 tsp. pepper
1. Put cut veggies and water in saucepan and simmer for 10 minutes.
2. Add corn, salt and pepper and simmer for 5 more minutes.
3. Stir in milk and cheese and simmer a few more minutes, until cheese is melted. If you like, top with a bit more cheese.
