Apple cake

DSC_0943This is what I made for a Christmas party at work this week. Other than cutting up a few apples, it’s super easy and not very labor intensive. The original recipe in my Swiss Heritage cookbook calls for a cup of oil, which I replaced with a cup of applesauce. (Back in my fat days I used to drizzle caramel icing over this; now I just sprinkle powdered sugar over the top or just leave it plain. It’s a pretty moist cake, so it’s not like it needs frosting.)

Apple Cake recipe

3 cups sliced apples

2 cups flour

2 cups sugar

1 teaspoon each of soda, salt and cinnamon

1 cup applesauce

2 eggs

1 teaspoon vanilla

1. Mix the dry ingredients ;n one bowl and the wet ingredients in a separate bowl, then combine. Mix in apples and pour into a greased 9-by-13 inch baking dish. Bake at 325 degrees  for one hour. If desired, sprinkle with powdered sugar as cake is cooling.

      Cool — hope you have a great time visiting your family! (We just had this again for breakfast this morning — I don’t feel so bad about it when I make it with applesauce instead of oil.)
