This is what we’re giving some of the more fitness-minded folks on our gift list instead of fudge or cookies this year. It’s a slightly adapted version of a “power ball” recipe Ben got from one of his baseball coaches. Basically, we added milk powder to make them less sticky and cut down on the chocolate chips.
Oh, and the verdict’s still out on whether we’re going to end up making them into bars or balls. Either way, they are yummy and nutritious!
Chocolate-cherry power bars (or balls)
1 cup peanut butter
1 cup honey
1/2 cup ground flax seed
1 1/2 cup rolled oats
1/2 cup milk powder
1/4 cup chocolate chips
1/4 cup dried cherries (we use cherry-flavored Craisins)
Mix ingredients together and either roll into balls or flatten into an 8-by-8 inch pan and cut into squares. No need to bake — these are ready to eat the instant you’re done!
